Cocktail Nirvana – Aviary

I’ve traveled all over the world and have experienced a ton of amazing things, including cocktail bars with jaw-dropping views and mind blowing presentations, but Aviary in Chicago took the cake and has forever spoiled me. From the moment you walk in and get a brief view of the magic in action, to the second the amuse bouche arrives you begin to understand that this is different.

The quaint, intimate dining area is perfect for sharing stories and obsessing over others’ libations and those gifted with the 2 ft tall chicharones!

You can choose from a five or three cocktail price fixed menu or go a la carte as I did…I did have dinner reservations afterwards and didn’t want to get too saucy! They started me with a mezcal and dry cherry slushy that quickly progressed to their signature “Signs of Spring” that was made up of rum, sherry, gin, thyme, orange peel, lemon, chicory and meadowsweet…the longer it sat, the more complex it became!

We raised the blinds next and opted for a scotch based drink called IFL Science (I Frickin Love) which came in a double beaker with 2oz of scotch, lemon, ginger, blueberries and dry ice…

Apply a bunsen burner and the magic happens; the liquid is forced into the upper chamber and macerates with the fruit which in the end drops back the bottom chamber and ends up with a red hue.

Of course the staff was amazing and the total experience was one I will remember forever; only 4-5 times in my life have I experienced a state of true nirvana from a dining experience, and this was one of them…the atmosphere, the music, the service and the craftmanship all combined for a perfect evening.
