Nana G’s Chicken & Waffles

All of their waffles are stuffed with bacon…all of their waffles are stuffed with bacon; oh dear lord! Nana G’s burst onto the food truck scene in January with their decadent flavor combinations and health food be damned mentality… and it’s working. The Hollcroft brothers hatched their idea for the truck last year and instantly knew they had to base it around their 101 year old grandmother’s “Chik-n-waffle” recipes.  Former fashion designers, they decided to sell everything and jump headfirst into learning the recipes and everything they could about running a food truck. Fast forward several months later, and they‘re now serving up the city’s best chicken and waffle combos (sorry Galdys) to adoring fans all around the metro.  While I love the colors and the design of the truck, they could have gotten Nana to smile a little more; it’s almost as if she’s saying “I know my stuff is good, now eat it!”

They wouldn’t divulge all of their secrets, but the waffle batter is combined with thick hunks of specialty made bacon and their chicken is marinated in salt water and butter milk for 48 hours! The waffle batter is light and produces a very fluffy product; however, this is isn’t some wuss batter made with powdered bacon or chopped so fine you can only taste it…you can actually see the pieces when you rip through the waffle…it is a thing of pure beauty.

The basic order comes with one waffle and two pieces of perfectly fried boneless chicken strips, topped with maple syrup and powdered sugar. The sweet and savory combination this creates is amazing; the sugar literally melts onto the chicken. The basic portion is enough, but if you have to go over the top, you can go with the gargantuan 6 piece and 3 waffles…
